Chocolate Brownie Cookies

Winter break has come and gone and here I find myself more than halfway through Winter Quarter.  Needless to say, I’ve been falling behind in my blogging ventures and school is chugging along as usual.  Life is filled with good days and bad and I’m starting to realize that it’s up to me to take charge of my own happiness.  And I believe that starts here on this blog.  So, here I am, with a yummy recipe from Bon Appetit to get the ball rolling.  Enjoy 🙂

RECIPE (Adapted from Bon Appetit Magazine):

– 3 cups powdered sugar (if you substitute with gluten free powdered sugar this recipe will be 100% gluten free!)

– 3/4 cup cocoa powder

– 1tsp kosher salt

– 2 large egg whites

– 1 large egg

– 4 oz bittersweet chocolate, chopped

Preheat oven to 350 degrees F.  Whisk powdered sugar, cocoa powder, and salt in a large bowl.  Whisk in egg whites and egg.  Fold in chocolate.  Batter will be thick.  Spoon onto parchment paper lined baking sheet leaving a couple inches open between each cookie.  Bake 14-16 minutes, turning around baking sheets half way through, until they are puffed and cracked on top.  Allow to cool.  Enjoy 🙂

P.S.  These cookies go especially well with vanilla bean ice cream. Yum!
