Earl Grey Chocolate Bundt Cake

Life is messy and scary and overwhelming and weird.  That’s why we have tea and chocolate and best friends.  And those three things happen to go together pretty well.  How about a cake made with Earl Grey Tea and Chocolate shared with a couple friends/roommates?  That was my night.  You should do it too.  Except we watched a creepy episode of Law and Order that made going to bed seem really scary which explains why I’m still awake at 2 in the morning! Ugh.  So, don’t do that part!  But eat cake and drink tea and hang out with your friends because those little happy moments are what make the rest of the crap life hands out, bearable.  I found this recipe on Shutterbean!  I also want to make her Lemon Buttermilk Bundt Cake and her Cheddar Cheese Bread and pretty much everything else on her blog.

RECIPE (adapted from Shutterbean):

Cake-

– 5 Earl Grey tea bags

– 1 cup hot water

– 1/2 cup butter (room temperature)

– 2 cups sugar

– 3 eggs

– 4 ounces unsweetened baking chocolate

– 2 cups all-purpose flour

– 1 tsp baking soda

– 1 tsp baking powder

– 1/4 tsp salt

– 1/2 cup plain greek yogurt

Preheat oven to 350 degrees F.  Spray bundt cake pan with cooking spray and set aside.

Steep tea in hot water.  Beat together butter, sugar, and eggs until fluffy.  Melt chocolate and allow to cool.  Add chocolate to mixture and beat together.  Add flour, baking soda, baking powder, salt yogurt and tea.  Pour into pan.

Bake 50 mins.  Allow to cool for 10 mins.  Flip over and dust with powdered sugar.

Serve and enjoy! 🙂
